Bring Home the Bacon

As we prepare for Thanksgiving, many of us reflect on what we are thankful for. Of course, I am thankful for all of the "default" answers. You know, God, family, friends, health, and so on. I by no means want to minimize the importance of any of these things. However, rarely do I hear people mention BACON in their list of answers.

BACON. Seriously, could there be a better food? I'd marry bacon if I could (no offense, Nathan). Whoever thought to rip this particular part out of the pig and fry it was an absolute genious. One way I love to use bacon is in bacon-wrapped pineapple.

Here is the recipe; you must try it!
Bacon Wrapped Pineapple
1 Package bacon
1 Fresh pineapple, cut into chunks
Cut the bacon in half lengthwise (so pieces are about 4" long). Wrap 1 piece of the bacon around a pineapple chunk & secure with a toothpick. Put on a foil-lined baking pan (one with edges due to the grease it creates) and bake at 425 for 15-20 minutes.

Here's another recipe I tried on some unsuspecting party guests this week:

Bacon Wrapped Smokies
1 Package bacon, cut in half lengthwise
1 Package little smokies
Brown sugar
Wrap a piece of bacon around a little smokie. Secure with a toothpick and put it on a foil-lined baking pan. Sprinkle brown sugar over them. Bake 15-20 minutes at 400. (if the bacon isn't brown to your liking, turn the broiler on for a couple of minutes at the end).


Nathan really enjoyed the smokies but they weren't my favorite. I'm definitely going back to the pineapple one instead next time I wrap something in bacon.

For those of you who would like more random facts, here's some interesting history behind the phrase "Bring home the bacon."
"In the 12th century, a church in England promised a side of bacon to any married man who could swear before the congregation and God that he had not quarreled with his wife for a year and a day. A husband who could bring home the bacon was held in high esteem by the community for his forebearance." (source: About.com).

Just a guess, but I bet after no quarrels for a year, the husband probably got home and the couple quarreled about how to fix the bacon. They just couldn't hold it in any longer. He wanted BLTs. No, she wanted bacon-wrapped pineapple. And then, it began....
