Happy Birthday, Jennifer!
Yesterday was Jennifer's birthday. So, for our official Birthday Club celebration, the girls and I headed to Symphony on the Prairie to hear the music of Billy Joel performed. The weather was great. The food was great. The company was great. The music was great. We had a great time!
For the show, you basically sit in a big throng of people and take picnics. It's fun to look around and see what everyone else brings to eat. I thought we had the best picnic food in case there was a competition. :)
Then at night the stage is all lit up...

Mindy made Jennifer a delicious homemade keylime pie... with a piece missing from her husband!..
We packed some great picnic food. I made Sweet and Spicy Picnic Chicken which was super easy to make and I think turned out well. Here is a LINK to the recipe from Real Simple magazine. If you try to make this.... I think next time I would turn the oven to broil for a few minutes at the end to brown it a little. Other than that, it was good. You can also make it in advance 1-2 days and eat it cold (which is what we did).

I also made Real Simple Magazine's Pasta Salad with Asparagus and Lemon. If I can brag, I thought it was really good. I'll be making this again. Here is the LINK to that recipe and here is the photo I stole from Real Simple's website. Oh, and this can be made up to 1 day in advance too.
Besides the pasta salad, chicken, and keylime pie, we also had fresh cut watermelon, brie and other cheeses, croissants, sweet and crunchy peanuts to snack on., and zucchini bread. We're a club that knows how to eat, that's for sure.
