Cake Mix Cookies, Oh Yes.

So, today I was craving.... well, lots of things. Let's face it; I just like to eat.

However, there was only one thing that I had time to make.... CAKE MIX COOKIES. They are quick, easy, and yummy.

It would be a sin to not share this recipe with you.

CAKE MIX COOKIES

1 Box cake mix, any flavor
2 Eggs
1/2 cup oil
Optional-- 1 cup of a stir-in (like chocolate chips)

Mix it all together. Scoop onto a cookie sheet & bake at 375 for 9-11 minutes. (Note: You don't want to overbake these. I do 9 minutes and take them out just before they are really done).

I'm not sure how many cookies the recipe yielded but I was able to do 2 cookie sheets-worth. Plus, I ate some of the batter, raw egg and all (don't tell my mom).

Here's where it gets fun. Cake mix comes in about a gazillion flavors. (is gazillion even a word?) I've done lemon, strawberry, spice (yum- and great for fall), chocolate, confetti, red velvet, orange, you name it. For stir-ins, you could do chocolate chips, peanut butter chips, andes mint chips, etc. The possibilities are endless. I happen to love citrus/chocolate together, so today I made orange cake mix with chocolate chips. It was a winner.

I'm on a cooking forum on the internet. They recently discussed their favorite combinations. This will get you thinking! Chocolate cake with peanut butter chips, carrot cake with white chocolate chips, put two chocolate ones together with white cream cheese frosting in between (think Oreo cakester), lemon cake with chocolate chips, French vanilla cake with half chocolate chips and half butterscotch chips, yellow cake with mini M&Ms, and white cake mix with craisins and white chocolate chips. There you have it.

Now, most bloggers would take a fancy photo with cookies on a pretty plate, in front of a glass pitcher of milk and next to a vase of flowers. But, this is my house. So, instead, here are my cookies, thrown into an old Rubbermaid container that my kids were just playing with.
