Cheating Buckeyes
I've learned one thing over the past couple of years of blogging. Some of you are cheaters.
There, I've said it. Cheaters, cheaters, pumpkin eaters. You heard me.
I post a delicious fancy recipe with a 35-step process and 45 of your favorite ingredients, promising it will be the best food you've ever eaten.... and nobody wants to make it. However, I post recipes that cheat..... using boxed cake mixes or frozen noodles, and everyone is all over it. Cheaters, you are.
Maybe "Cheaters never win".... but you and I both know they do get out of the kitchen sooner. And, that's why today I'm sharing another cheater recipe.
I happen to love Buckeyes (some of you might call them peanut butter balls).
I'm lucky that my best friend, Jennifer, makes them and shares at Christmas. They are one of my favorites. However, they are also a pain to make. Really.... who has time to hand-roll sticky peanut butter balls and dip them in chocolate? I don't.
So, today I made some of my cheater Buckeyes. They have the same taste but I just made them in 15 minutes or less. Here you go.
In a bowl, mix 1 cup creamy peanut butter, 2 sticks of melted butter (I used the real thing, baby), 4 cups powdered sugar, and 1 cup graham cracker crumbs (I use the kind pre-crumbed at the store). I don't even mix it that well-- see, you can see all the powdered sugar that didn't get blended in.
Spread the mixture into a 10x15 rimmed baking sheet (I used a 9x13 cake pan because that's what I had) that you've sprayed with Pam.
I used the bottom of a measuring cup to press it down. Heaven forbid I use my hands and get them icky.
In the meantime, melt 2 cups of semisweet chocolate chips. Now, some cookbooks get all complicated when they have you melt chocolate chips. They want you to pull out a double-boiler thingy or whatever. NO! Balderdash! Simply dump them in a 2 qt saucepan that you've sprayed with Pam and turn on the heat (I'm brave- I do it on medium). Stir it with a spatula as it melts. Voila.
Spread the melted chocolate over the peanut butter layer.


Stick the whole thing in the freezer or fridge to set. Cut into squares. When I say squares, I mean small squares. They are very rich and you'll want to eat them more like a small piece of candy (not like a big honking piece of cake).
Heavenly. Simply heavenly.

Peanut Butter Candy (like Buckeyes)
1 cup creamy peanut butter
1 cup (2 sticks) butter, melted
4 cups confectioner's sugar
1 cup graham cracker crumbs
2 cups semisweet chocolate chips
Coat a 10"x15" rimmed baking sheet with Pam. In a large bowl, combine all ingredients except the chocolate. Spread the mixture over the baking sheet. Spread melted chocolate over the top. Freeze for 15 minutes then cut into squares.
