TOP SECRET Chicken Salad

Today I had a hankering for chicken salad. By hankering, I mean when a pregnant woman craves a specific food.... she had better get it QUICK or havoc will occur.

So, I made this:
Now, this recipe is STOLEN. It's my BFF, Jennifer's, recipe. And, she probably got it from her mama. They are both great cooks and worthy to steal recipes from. I did NOT ask her permission to post this (better to ask forgiveness than permission, right?). Let's hope it's not a family secret. Just promise me that if you use it that you "didn't get it from here.". Wink, wink.

So, here is the best recipe for chicken salad.... that you did NOT get from me.

CHICKEN SALAD

2 cups cooked, diced chicken
3/4 cups diced celery
1 cup seedless grapes (I cut the big ones into 4ths)
1/4 tsp salt
1/2 cup mayo (I use lowfat real mayo)
1/2 cup almonds (sliced) OR pecans (I use almonds)
1 cup pineapple chunks (I use the can kind and cut them even smaller. Also, drain well.)
1 TBSP lemon juice
1/2 cup sour cream
Chopped onions (optional)

Mix together & chill.


Amber's Notes: I like to serve it in a pita bread pocket instead of bread. Yum. And, if I'm in a pinch I will use canned chicken-- but I buy the 'nice' kind that's all white chicken breast meat from Sam's Club. I'm sure Jennifer's never used canned chicken; she is way more fancy than that. If I have time or if I'm cooking for someone important, I cook & shred my own chicken.

So, try it and love it. But, you did NOT get this top secret recipe from me. Wink, wink.

I craved subway chicken salad when I was pregnant with Claire. I do love chicken salad-I'll have to try this (minus the pineapple-I dislike all things pineapple)

For once, there is a recipe out there that I can make and I have all the ingredients available to me here in Bangladesh (except for the sour cream - I think I can manage w/o.). I don't have pita bread either but, bread will work just fine or even the round flatbread (like a soft tortilla) they make here. I just fold it in half and it looks like a pita! Sounds yummy! Thanks for posting...even w/o Jennifer's permission! :-)
