Crockpot Ribs

Today I made crockpot ribs. They are easy and yummy so I thought I should share.

I buy the meat labeled "Country Style Ribs" in the pork department. I get the boneless because I'm lazy, but bone-in is fine too. I have gotten them super cheap before (close to $1/lb even for bone-in) and often find them 'reduced for quick sale' at Sam's Club at a really good price.

They look like this. You'll be tempted to cut the fat off, but don't you dare. That's where the flavor is.
First, I put them in my crockpot and drizzle them with just a small amount of BBQ sauce (not much or you'll have too much liquid in there). Notice I'm using a liner. I'm new to liners and think they deserve a shout out. By the way-- I've also had to stack the ribs in the crockpot before when I had too many and that worked fine too:
Let them cook on low for 5 hours, 6 hours tops. You do NOT want to cook them too long or else you'll end up with shredded pork because it will fall apart even more than they already do. They will look like this when done:
Then, lay them in a baking dish (line with foil for easy clean-up) and pour your favorite BBQ sauce all over them. I like Sweet Baby Ray's. If you happen to have some liquid smoke, drizzle some of that too. Don't buy a bottle just for this recipe though; it will be fine without it too.
Now, stick the whole pan in the oven on BROIL for 5-7 minutes. This is where the BBQ sauce makes magic happen. Take them out and you have this:
If you want to be really fancy like me, you can serve them with Betty Crocker boxed julienne potatoes. Martha Stewart would cringe at that. Notice there's also no vegetable on my plate. How embarrassing.
If you can't tell, I serve them with the fat on. They easily fall apart so I let the guests take their own fat off. Let them earn their keep.

Oh, and I must give credit to my kitchen helper today. Here she is, supervising the whole process from the bottom drawer.
And that, my friends, is how to make easy crockpot ribs. I should also mention that if you have a fear of leaving the crockpot unattended while you're away from home (not to mention any names, Mike)... you can also bake them in the oven, covered, for 2 hours at 350 for the same results and then broil as above.

Voila.
