Microwave Molten Lava Cake
When life gives you lemons, make lemonade.
When life gives you a big ice storm, make molten lava cake.
For those of you who aren't local, we are in the midst of a big ice storm today. We woke up to see this on our back deck:


The city is practically shut down. And, an even bigger ice storm is happening now and will last through the night.
Everyone else is preparing for possible loss of electricity tonight with their flashlights and kerosene heaters. I thought that making a molten lava cake would be a better emergency plan for our family.
So, here is how you make a MICROWAVE molten lava cake. That's right, folks.... I said MICROWAVE. And, with only TWO ingredients. This was originally a Pampered Chef recipe but they want you to buy their rice cooker to make this in. Balderdash! You do not need their fancy-pants rice cooker! So, here we go....
First, occupy your toddler by giving her a big bowl of icicles from the back deck to play with.
Then, get out a box of chocolate cake mix and a can of chocolate frosting (you'll only use half the can- so save the rest to binge on when you're stressed).
Make the cake mix according to the box directions. Pour it into a microwave safe dish that you've sprayed with Pam. Warning: My dish was almost too small. Either leave out some batter (which you can eat by the spoonfuls later, right?), or make sure your dish is plenty big to allow for the cake to rise.
Then, take HALF the container of frosting and put it on top of the batter by the spoonful.

Then, use your spoon to push down the globs of frosting so that it goes into the batter. (Pampered Chef has you leave it on top... but I prefer to use my official push-it-down method).
Add the lid and cook in the microwave for 8-10 minutes.
Voila! It's done.
I'm not sure why, but I inverted mine. Next time I won't invert it. What was I thinking?
Inverting it can be messy; the lava is runny & goes everywhere. So, don't invert it unless you are feeling wild like me.
Serve warm (and it would be even better with vanilla ice cream if I had any).

Now, this is not the best molten lava cake in the world. I'm sure one made from scratch would be better. However, in an emergency situation where chocolate is needed or if you have last-minute guests for dinner, this will work perfect. I will be making this again.

1 box chocolate cake mix
1/2 can chocolate frosting
Make the cake mix according to the box directions. Pour into a microwave-safe dish (large enough for the cake to rise) that you've sprayed with Pam. Add the lid and cook on high 8-10 minutes. Serve warm.
