Pasta Salad With Asparagus & Lemon

I'm going to my Grandpa's 94th birthday party tomorrow so I decided to make this yummy pasta salad to take along. It's a favorite of mine for summer when asparagus is in season.

This is from Real Simple Magazine. It's real. It's simple. It's Real Simple!

Pasta Salad With Asparagus & Lemon
8 oz (1/2 box) penne pasta
1 lb fresh asparagus (ends trimmed), cut into 1" pieces
1/4 cup shredded parmesan or parmesan pieces
2 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp fresh lemon zest
1/2 tsp salt
1/4 tsp pepper

Cook the penne according to the box directions. Add the asparagus during the last 3 1/2 minutes of cooking. Drain & rinse under cold water to cool. Transfer the penne/asparagus to a large bowl. Add remaining ingredients. Toss to combine. Store in the fridge. Can be made 1 day ahead.
Easy to double for large potlucks.

There you have it!

sounds yummy, i might have to try that one, altho pretty sure I'm the only one who would eat the asparagus. And we can't have asparagus in our house without referencing the line from ELF...
